Recipe: Triple Chocolate Cupcakes from Vegan Lunch Boxby Jennifer McCann (although mine are only single chocolate because I didn’t have any vegan chocolate chips and I’m not using chocolate frosting)

Not sure if it was the vegan-ness, the altitude, my crappy apartment oven, or a combination of all three, but they all fell a little in the middle and about six of them wouldn’t come out of the pan at all without smooshing.  Anyone know what to do with smooshed cupcakes (besides, you know, eating them while standing over the sink)?  I plan on frosting them with peanut butter frosting tomorrow.  Mmmmm . . .

What you do is make a chocolate ganache and the hole in the middle disappears. Don’t know how to do it vegan, however. Needs that butter! Happy Birthday!

Yeah, not sure that you can make vegan ganache. I think it pretty inherently contains cream. However, the peanut butter frosting filled the holes nicely, and I have plans involving ganache for the ones that got smooshed . . . mmm . . .
