Yesterday at the farmers’ market I picked up some blueberries and zucchini.

What’s that?  Blueberries and zucchini don’t go together?  Sure they do – in blueberry zucchini bread!

Blueberry Zucchini Bread

  • 3 eggs
  • 1/2 cup olive oil
  • 3 teaspoons vanilla extract
  • 2 cups white sugar
  • 1/2 cup applesauce
  • 1 1/2 cups shredded zucchini
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 pint fresh blueberries

Mix all wet ingredients including the applesauce and zucchini.  Stir in dry ingredients.  Fold in blueberries.  Divide batter between two greased and floured loaf pans. Bake at 350° for an hour and 20 minutes.  Cool, slice, eat, enjoy.
